Bonaventure's Shrimp Fried Rice

Welcome to another amazing recipe part of our Week of Comfort event! Today we are going to be making a fried rice recipe that is sure to have everyone in your home coming back for more and well if you live alone then that just means there is more for you. Now there are plenty of ways to make fried rice, the most famous of all of these would be Chicken Fried Rice. Of course, Chicken is by all means the most accessible of proteins out there since it is so versatile. There are other ways to make Fried Rice that still include amazing asian flavours however and today we are going to make a Shrimp Fried Rice.

Let’s take a look at what you will need!

  • 3 cups of White Rice (Minute Rice will work perfectly for this dish, but you can always use a Short to Medium grain rice of your liking)
  • ¼ cup of diced Onion
  • 2 cups of Cold Water Shrimp (or more if you prefer a lot of shrimp) (Available Here!)
  • 2 Large Eggs
  • 2 tablespoons of Soy Sauce
  • 2 tablespoons of Vegetable Oil for frying
  • Your choice of vegetables (Frozen mixed veggies will work fine)

Now, let’s get to frying this rice up! First, you are going to want to cook your rice by following the instructions on the package. The only change we are going to make when  it comes to boiling your rice is rather than letting it soak every last drop of water up, you are going to want to leave a little bit of liquid in your rice so that it does not completely dry out when frying it.

Next up in a large pan, add in your oil and your onions. Let this cook on MEDIUM heat until they become a nice golden brown colour. Then, you can add your rice into the pan. 

Once you’ve added in your rice, start stirring it and combine your rice with the oil and your onions very well as this will be the base for your flavour. Next up, create a well or a hole in the middle of your rice in the pan and crack in your two large eggs. Allow for your eggs to cook and scramble them, once the egg has mostly cooked, integrate them into your rice.

The last two remaining steps are to add in your pre-cooked and frozen Cold Water Shrimp, from there you can add in your Soy Sauce which will not only add in amazing asian flavours, it will also give your rice that signature fried rice colour we all know and love! If you are adding vegetables into the mix, this would be good time to add them and give them time to cook slowly.
